Female family run farm in the Gedeb district of southern Yirgacheffe, Bedhatu Jibicho has has been running the farm since 1991. For this washed lot, cherries are hand sorted and floated to separate out less dense beans, then depulped, fermented for 48 hours, and washed and classified again. The parchment is rinsed and placed on raised beds where it's hand sorted and dried over a 12 to 15 days. It is this detailed process that makes the coffee so special.
