Roble Negro is an example of a biodiverse coffee, farmed on intentional land. Jorge is passionate about preserving natural water sources. All weeds are picked by hand and they harvest microorganisms from the humus layer of the forest floor to create a non-toxic insect control that protects against leaf rust. While processing they take the cherry skins and reincorporate them into the soil to act as fertilizer.
