    Roaster’s Notes
    The Guji Highlands Allona washing station stands atop a mountain about 45km west of the town of Shakiso, Ethiopia. Around 80 farmers bring their coffee to this station, where it is meticulously washed and dried. The station pays careful attention to the temperature and sun exposure of the coffee seeds as they dry. The result is an ultra-consistent, delicately beautiful cup: citrus, tea, and sweetness.
