Roaster’s Notes
Barrancas comes from San Marcos in Guatemala. Literally translated it means "ravines". Small and medium estates around the town of Barrancas Grande produce this coffee. Many of these farms are nestled in the ravines of the mountain side and are only accessible by dirt roads. Barrancas is a washed coffee that underwent a dry fermentation for 18-24 hours before being dried on cement patios for 5 days.
