Roaster’s Notes
If you’re a coffee person you might be thinking, “Brazil Highlands is an oxymoron.” Well, we say whereas altitude may be absolute, but Highlands are relative. In Brazil, a relatively uniform topography compared to the neighboring Andean countries to the north, 1,200 meters above sea level is downright skyscraping. But in our case, Highlands refers to a series of coffees that takes a regionally specific flavor profile and cranks up the heat.
