Don Ruiz is a wonderful collaboration between farmer Jorge Correa of Finca San Juan in Caldas and producer Jose Giraldo of Cafe 1959 in Quindio. Jorge Correa delivered a blend of Geisha, Red and Yellow Bourbon, Tabi, and Typica coffees to Cafe 1959’s processing mill La Clarita in Quindio. There Jose Giraldo goes to work, doing a 48hr full cherry natural fermentation, including a low oxygen stage, before slow drying the coffee on raised beds.
