Colombia offers the widest range of flavor profiles of any origin we work with. As the Andès split into three distinct arms through western Colombia, many distinct micro climates are created leading to distinct growing regions with their own unique flavor profiles. This washed coffee was grown by Hernan Pampanija outside the town of El Jardìn. After careful picking of ripe cherries this coffee was dry fermented for 20 hours and dried slowly under shade.
