Costa Rica La Pastora

Sweet & Tart

This unique coffee borrows a washed fermentation traditional to Kenyan coffees, yielding a surprisingly tropical and floral cup that reminds us of strawberry shortcake.

    Roaster’s Notes
Minor Esquival Picado, owner of Finca La Pastora, calls this coffee "African Washed", processed in a style more typical of Kenya where the cherry undergoes an initial fermentation before being depulped, fermented again, and then sundried on raised beds. One of the keys to Minor’s fantastic coffee is he only picks the cherries when they are the color of Sangre de Toro (bull’s blood). The ripe cherries are almost purple, and are at their absolute sweetest.
