I’m gonna be honest, roasting this coffee has been hard. We’ve had it for a few months and have been working on dialing in the profile. The work has been worth it. This exquisite cup of honey processed coffee from Costa Rica was hard to coax out, but once we found it, we can’t stop drinking it. It is fruit-forward with a silky sweetness that lasts for hours. Tres Milagros is going to become a staple here at the Onyx roastery.
