This coffee comes from the ASOPROCAFE organization located in the Tolima region of Colombia. The caffeine is removed from the coffee by going through a natural ethyl acetate process. The beans are soaked in a solution made from fermented sugar which binds to the chlorogenic acid, allowing the extraction of the caffeine. The beans are steamed at low pressures until there are no E.A. solution traces left. Notes of dark chocolate, caramel, cherry, almond.
