    Roaster’s Notes
    The processing on this plot from Florence Hill de Mathies is straightforward, but meticulous; it is washed, depulped, fermented for 12 hours, and dried on raised beds. This comes not only from Hill, but from the guidance of Aida Batlle, as well. The importance of these methods shines in this coffee with amazing stonefruit and citrus acidity, a coating mouthfeel, and a sugary sweetness. It has been named an Aida Batlle selection for its excellence.
