This is the 5th harvest season we have partnered with Elias. Finca Tamana employs approximately 50 workers during the harvest season to collect coffee cherries on 40 hectares of cultivated land. After harvesting, ripe cherries are left to soak in a pool of water for 12 hours, with the water changed two or three times in between. Then, seeds are removed and transported to a drying room for a period of 25 to 30 days.
