Roaster’s Notes
Moplaco first sorts fresh picked coffee cherries.Then, they passed the cherries through a hand-cranked a depulper to remove most of the coffee fruit.The coffee seeds are soaked in water for approximately 36 hours.After this soaking period, the remaining fruit and mucilage is washed off the seeds.Then, they are dried on raised beds.
