Farmers around Mijane Werasa sell their coffee cherries to the washing station where it is depulped, fermented, and washed, all within 36 hours from purchase. Then, the coffee dries under the sun for 7 to 12 days. At this point, the coffee is collected into a lot and available for purchase via the Ethiopian Commodities Exchange to an exporter such as Moplaco, our partner. Moplaco dry mills, sorts, and polishes the coffee in their extremely detailed system.
