    Roaster’s Notes
    Last year we this coffee was released in memory of a great man. Tony Vasquez was a giant in the specialty coffee industry and was revered by a majority of the leaders of our industry. Since his passing Don Pepe Estates has passed to Tony Vasquez’s son; Tony Vasquez Junior has taken up his father’s mantel and has immediately continued the legacy of quality at Don Pepe Estates. This is our first season working with their new management and we have been more than happy across the board with quality and production. This lot is grown at the upper reaches of the farm nearing the point at which there is not enough oxygen in the air to produce high quality coffee. These high elevations put an immense stress on the plants and in turn cause them to produce extremely dense cherries. The density of the cherries is directly related to the sugar content and sweetness of the coffee once it has been roasted. Don Pepe Estate’s coffees are some of the sweetest coffees available. Don Pepe is located in the humid forests of Panama, on the slopes of Volcan de Baru in Boquete. The estate was first planted by Don Enrique Vasquez who was a pioneer and founder of the town and coffee growing in 1898 as well as the family responsible for bringing the infamous Geisha varietal to the region from Costa Rica. Since then, and more than four generations later, Don Pepe Estates is still producing high quality coffees sought after by only the best roasters in the world. Don Tony has also assigned 10% of the total land to preserve first growth rain forest, with his environmental vision and quality focused production, Don Tony ensures that Don Pepe will continue to grow, and produce some of the world’s best coffees for generations to come.
