Roaster’s Notes
David Flores is 3rd generation of coffee producer, who’s grandparents came to Diamante from the Andean area of Cajamarca. Diamante is about a good two hour ride from the town of Huaquillo and another 30 minute walk to ell Morito (David’s Farm) where he tends to his 6 hectares of all 100% Yellow Caturra. Currently, David has a ferment tank and a dryer with capacity for 16 quintals every 7 days. Diamante is one of the zones of San Ignacio where there are organic practices since people are not used to using chemicals and also because they want to conserve the forest and its environment.This particular lot (Lot 3) stood out as a great filter option due the elegant layers of fresh fruit coupled with it's lovely structure.
