Ana María Donneys Pink Ranger

Out of Stock

This is one of the fruitiest, sweetest coffees we’ve offered all year, and that amazing character is all due to the efforts of producer Ana María Donneys. Ana María—a Q Grader and co-founder of the International Women Coffee Alliance’s Colombia chapter—uses a very intentional double fermentation to create this coffee. First, her coffee is fermented whole for 96 hours. Then, it’s partially pulped and fermented again for 24 hours with lactobacillus and yeast taken from the University of Quindio’s research lab before being dried as a honey process. This second fermentation brings forward a ton of fruit flavors while preventing the formation of unwanted acids. The result is incredible, with notes of strawberry, cherry, and papaya both fresh and in candy form.

Understanding roast levels

Roast level affects both flavor and body. Here's what to expect from each.

Light

Best for: those that prize delicate flavors and a tea-like feel above intensity.

Light-Medium

Best for: those that enjoy juicy acidity and gently caramelized sugars.

Medium

Best for: those that enjoy caramelized sugars and a smooth cup.

Medium-Dark

Best for: those looking for classic coffee flavors with a kiss of roast.

Dark

Best for: those that love intense, smoky flavor and a full body above all else.

Trade Tip

Roasters don’t always agree on roast level — one roaster’s dark might look the same as another’s medium. We taste and assign every coffee our own roast level, so your matches stay consistent no matter who roasted them.
