I haven’t had as much coffee from Hidalgo as other regions of Mexico so this one was quite exciting even before reading about how much producer Montze Olvera has impacted her region. In the cup, her honey processing of the Marsellesa and Typica varieties reveals notes of gingerbread alongside big citrus and tropical acidity.
