Brownie is producer Carolina Ramirez' first attempt at experimental processing, and what a first attempt it is. She processed the coffee cherry by intermittently adding coffee cherry juice to the tank over almost 7 days of fermentation. The result is a coffee with dark chocolate flavors that starts off with a kiss of roast that cedes to wild tropical fruit as it cools. It's one of a kind.
