After growing this excellent Pink Bourbon variety on his family farm, Finca Las Flores, Jhoan Vergara processes it at his mill, Beneficio Peñas Blancas. He uses a Thermal Shock method, which involves heating the coffee in its own juices at the end of fermentation, allowing it to absorb more flavor, before rinsing it with cold water to lock that flavor in.

The result is super juicy coffee with a combination of big tropical fruit notes that remind us of pineapple and lime with intense lavender aromatics.
