Of the many hot new coffee varieties that have popped up in the past few years, Chiroso is a bit of a sleeper hit. With its smooth body, floral aromas, and sweetness, it reminds us of varieties like Pink Bourbon and Gesha. Wilfran Trujillo grows his Chiroso trees at 2000m in the farm he started over a decade ago with his father. His careful washed processing really brings out the juicy acidity and loud aromatics we love in this variety. We taste tangerine, jasmine, and, as it cools, tropical acidity like pineapple or kiwi. It’s an elegant, dynamic coffee that will make Chiroso one of your new favorite varieties.
