The first Papayo variety Trade has ever offered is here—but that's just one of many reasons to grab this rare Trade Secret. 

Compared to other washed process coffees, this one has big tropical fruit and cherry flavors and winey acidity. There's also a hint of cocoa in the background rounding things out.

It's processed by Yessica Parra and her brother Diego, who are part of a new generation of specialty coffee farmers. Coffee has been in their family for generations, but they weren't planning to get into coffee until Yessica started studying it at school. In the last few years, they've started not only growing and processing coffee but also roasting it and exporting it.

Best for: those that enjoy balance and classic flavors like cocoa and nuts.

Medium-Dark

Best for: those looking for classic coffee flavors with a kiss of roast.

Dark

Best for: those that love intense, smoky flavor and a full body above all else.

Trade Tip

Roasters don’t always agree on roast level — one roaster’s dark might look the same as another’s medium. We taste and assign every coffee our own roast level, so your matches stay consistent no matter who roasted them.
