Just in time for summer: a ridiculous amount of fruit candy flavor from the master of coffee fermentation Edwin Noreña.

Creating this ridiculously sweet and juicy coffee takes several steps. First, the cherries undergo carbonic maceration, in which they’re sealed in tanks with carbon dioxide pumped in and fermented. Next, the skin and some fruit is removed to the level that Edwin would call Black Honey. But, before drying, Edwin does a second fermentation in which he introduces mossto—the liquid from the initial fermentation—along with a special yeast and dried fruit.

The result is a coffee unlike any other: a sweet, intense, refreshing candy treat.

    Watermelon coffee

    Not sure how I became the target audience for this coffee, I do like experimentation and fermentations but the watermelon did dominate this coffee. The result was a little thin in body and then a flavor comparable to fragrant soap. Mix 50/50 with Colombian for a more balanced experience

    Believe the description!

    I can tell that underneath the watermelon flavor there is a roast I would like. I was very excited to try this, but not quite ready for the overwhelm of watermelon bubblegum which, turns out, is kind of a weird combination with coffee. Very very light roast.
