It’s a Trade Secrets first: Ombligon.

With such a dynamic flavor profile, it’s easy to see why this relatively new variety is making waves across international barista competitions. We taste notes of pomegranate, grape, jasmine, and macadamia nut in this medium-light roast. 

It’s produced by Gerson Mora at Villa Pastora Farm, a family legacy located in Palestine, Huila, Colombia. Through dedication, innovation, and a commitment to quality, the farm has evolved as it has passed through generations now in its third and fourth generation of coffee growers. 

This particular lot undergoes an 72-hour anaerobic fermentation, and is then inoculated with yeast. Once fermentation is complete, the coffee cherries are depulped and submerged in water for 24 hours before drying. This makes the unique flavors of this variety pop even more.
