Jhoan Vergara Thermal Shock Pink Bourbon

Subtle & Delicate

Jhoan Vergara runs his Pink Bourbon through a meticulous process. He lets the cherries oxidize before pulping and fermenting them in a low-oxygen environment. For that fermentation, he uses microorganisms isolated specifically for Pink Bourbon by a local lab he partners with. Finally, he finishes with a hot water wash—a thermal shock—to keep those yeasts and organisms working until the coffee is carefully dried. The result is a coffee that bursts with intensely fruity notes of Crunch Berries, ripe cantaloupe, and juicy key lime.
