    Roaster’s Notes
Kanzu is a coffee washing station in Rwanda’s Western province. Coffee grown by nearby farmers are harvested from March through July and brought to the Kanzu station to be processed. Once the fruit is removed, the coffee is dry fermented for 16-18 hours before the remaining mucilage is removed. Then the coffee completes its processing journey by drying in the sun on raised beds.
