    Roaster’s Notes
    Sebastián grows these Pacas cherries on his farm above the town of El Cielito, overlooking Lake Yojoa.The cooler temperatures from the lake and the fog help to slow down the maturation of the fruit. With the help of his wife, family, and only a handful of employees, Sebastián manages to do all of the actual farming himself.
