Understanding roast levels

Roast level affects both flavor and body. Here's what to expect from each.

Light

Best for: those that prize delicate flavors and a tea-like feel above intensity.

Light-Medium

Best for: those that enjoy juicy acidity and gently caramelized sugars.

Medium

Best for: those that enjoy balance and classic flavors like cocoa and nuts.

Medium-Dark

Best for: those looking for classic coffee flavors with a kiss of roast.

Dark

Best for: those that love intense, smoky flavor and a full body above all else.

Trade Tip

Roasters don’t always agree on roast level — one roaster’s dark might look the same as another’s medium. We taste and assign every coffee our own roast level, so your matches stay consistent no matter who roasted them.

    It's like drinking good vibes!

I'm not so great at defining the different notes of flavors, but I will say it was so good I wanted to chug it! So happy I found this one!

Not what I was hoping for

This one drinks more like a black tea than a coffee. The beans give a bright honeysuckle aroma but almost none of that fruit makes it into the brew. Tannins are notably strong, med-high acidity, and a slight sour pucker to finish. Not exactly what I go for personally, but I may just be unfamiliar for what these beans are striving to be.

    Finicky brew

Brewed with V60 / Third Wave Water Light Roast. Used C40 and ZP6 for comparison.

This coffee was difficult if not impossible for me to dial in. Early brews suffered from severe drawdown stalls and produced thin, muted cups with little sweetness or acidity. After simplifying the pour structure and adjusting grind size, the coffee did become somewhat more expressive: black tea, light brown sugar sweetness, and hints of lemon peel.

The cup is delicate and light-bodied, with tea-like characteristics dominating throughout. Aromatics improved with higher extraction and the ZP6 grinder produced a cleaner finish with less dryness, but I never found the nectarine note advertised or any stone fruit to speak of. Acidity remained subdued, and the finish often leaned slightly drying or tannic as the coffee cooled.

While technically clean and pleasant enough, I found this coffee more restrained than compelling. Drinkers who enjoy subtle, tea-forward washed Ethiopians may appreciate its elegance, but I was left wanting more sweetness, fruit, and complexity.

    Too lemony

I don’t really care for this one and there is no way to seal the bag once it is opened.
