Santa Ana, Pineapple Process
Funky & Fruity
Producer Nando Diaz ferments pineapple with local yeast to create a starter that is then used to ferment a lot of his coffee beans. The result is this complex coffee, which does taste a little of gently caramelized pineapple, with lovely lemon and vanilla flavors to boot.
